Count: to calculate the total number of people or things. It's to say numbers in the correct order. It's to include somebody/something when you calculate a total. It's to consider somebody/something in a particular way.
Your : of or belonging to you
Blessings : God's help and protection and approval to do something good or helpful.
I had to study and meditate on these until I understood that counting your blessings means calculating and numbering in the right order after considering in a particular way the blessings of God. Sounds nice. .
Let's study Psalm 103:
"Bless the Lord, O my soul;
And all that is within me, bless His holy name!
Bless the Lord, O my soul,
And forget not all His benefits :
who forgives all your iniquities,
who heals all your diseases,
who redeems your life from destruction,
who crowns you with loving kindness and tender mercies ,
who satisfies your mouth with good things,
So that your youth is renewed like the eagle's"
I believe we can see some blessings to count but they are innumerable. They are too much.
Why should we? ?
Every human being have the tendency to forget the good done to them by a person when the person offends or disappoints. It's good to remember and count the good in order to reconcile. Counting your blessings enables you to see reasons to thank God which is the will of God in Christ Jesus towards us (1 Thess. 5:18).
